"Natural Sake" Series is made entirely from 100% organic rice and 100% natural water, using the traditional kimoto brewing method. Among this series, the most popular choice is this Junmai Genshu. With an affordable price and a flavor that preserves an old-fashioned richness, it’s a solid Junmai sake.

As a genshu (undiluted sake), it has a slightly higher alcohol content at 16.5%. With a polishing ratio of 80%, you can truly taste the depth of the rice flavor. Like other sake from Niida Honke, it has an overall clean, slightly sweet, and gentle profile that makes it very approachable, yet it also has a bit of richness that gives it a unique character loved by the shop owner. It’s enjoyable to compare this with their Junmai Ginjo as well.

Since brewing year 2018 (BY2018), this sake has been crafted with kimoto starter culture and indigenous yeast, like other natural pure rice sakes in their lineup. The result is an even deeper flavor than before. It’s delicious at room temperature but also wonderful when warmed. From nurukan (warm) to atsukan (hot), each temperature reveals a different facet of the sake, each enjoyable in its own way.
