About the Sake (from the Brewer):
This unfiltered, undiluted sake is made from naturally grown Yamada Nishiki rice cultivated by Mr. Sugari in Kamisato Town, Saitama Prefecture, and brewed using Kidoizumi Brewery's unique high-temperature yamahai process. Every step, from rice cultivation to sake production, reflects meticulous craftsmanship. Brewed with a 60% polishing ratio, this refined junmai sake offers a full-bodied yet clean taste. As it’s an unpasteurized sake, please store it refrigerated, even if unopened.
About Hyuga Farm Cheese Factory:
Located in Sanda, Hyogo Prefecture, this farm raises approximately 100 Holstein cows and collaborates with skilled cheesemakers to produce cheese. They offer two types of fresh cheeses and five types of aged cheeses, including hard, washed, and blue varieties, all with a mild flavor suited to Japanese tastes.
